A Thanksgiving Treat-

In memory of my dear mother, one of her famous quick, easy and delicious desserts!  She passed away on Christmas Eve, 2012 but baking something delicious from her recipe collection, "Real Grandmas Don't Serve Spinach," is one of the ways I honor her and keep her memory alive.

Pumpkin Pie Dessert has become one of our favorite recipes and is often requested by friends and family.  We serve it all year round, although we usually make traditional  pumpkin and pecan pies for Thanksgiving.  This year we will leave the rolling pin behind and waiver from tradition a bit without sacrificing the aromas and flavors of pumpkin pie.  By popular demand, Pumpkin Pie Dessert will be the star attraction on our Thanksgiving dessert table.  For those pecan pie lovers, I'll be mixing toasted pecans into the crumb topping.  It's so easy and quick, children can help but it's guaranteed to rate right up there with gourmet desserts that take hours to make.  With it's sweet crumbly crust, rich filling and perfect topping, I know it will win the hearts of your guests this Thanksgiving or anytime throughout the year.  So without further ado, I give you:


PUMPKIN PIE DESSERT

Preheat oven to 350 degrees.
CRUST:
1 package of yellow cake mix (reserve one cup for topping)
1 stick (1/2 cup) of butter or margarine, softened
1 egg
-Mix and press in the bottom of a 9" by 11" pan.

FILLING:
1 large can (29 oz.) or 2 small cans (15 oz.) pure pumpkin (not pumpkin pie mix)
2 1/2 teaspoons pumpkin pie spice
1/2 cup brown sugar, packed
2 eggs
2/3 cups of milk
-Mix filling and spread over crust.

TOPPING:
1 cup of cake mix
1 cup of sugar
1 teaspoon cinnamon
1/2 cup ground, toasted pecans, optional
1 stick (1/2 cup) butter or margarine, cold
-Stir together the 1 cup reserved cake mix, sugar, cinnamon and pecans, if desired.  Cut in margarine and crumble over filling.  Bake at 350 degrees for 45-50 minutes.  _________________________________
